Ingredients

1/2 cup grated carrots

1/2 cup sweet onions

2 tablespoons olive oil

2cup rolled oats

1/2 cup roasted cashews

2cups cooked chickpeas

Juice of 1 lemon

2tablespoons soy sauce

1 tablespoon flax meal

1 teaspoon garlic powder

1 teaspoon cumin

1/2 teaspoon turmeric

 

Directions:

1. Mix together the carrots, onions, and olive oil in a baking dish and stir to combine.

2. Place the baking dish in the air fryer basket and roast at 350F (177C) for 6 minutes.

3. Meanwhile, put the oats and cashews in a food processor or blender and pulse until coarsely ground. Transfer the mixture to a large bowl. Add the chickpeas, lemon juice, and soy sauce to the food processor and pulse until smooth. Transfer the chickpea mixture to the bowl of oat and cashew mixture.

4. Remove the carrots and onions from the basket to the bowl of chickpea mixture. Add the flax meal, garlic powder, cumin, and turmeric and stir to incorporate.

5. Scoop tablespoon-sized portions of the veggie mixture and roll them into balls with your hands. Transfer the balls to the air fryer basket in a single layer.

6. Increase the temperature to 370F (188C) and bake for 12 minutes until golden through. Flip the balls halfway through the cooking time.

7. Serve warm.
